In search of the perfect Ginger biscuit?

I want it crumbly, slightly chewy with a bit of a crunch?

These are quite firm and chewy (and greasy ), but delicious and easy:

1lb self-raising flour
8oz caster sugar
8oz marg/butter
2 tbsp golden syrup
2tsp ground ginger
1 tsp bicarb of soda

Melt fat and syrup. Add to dry ingredients and mix well. Roll into walnut-sized balls. Bake on a greased tray at 180°C for 15 minutes.

It was a recipe I was after - are the delia ones very crunchy?

you can experiment with the delia ones by varying the heat of your oven, size of ball and cooking time. Eventually you will end up with the perfect (to you) crisp to chew ratio and have made loads of yummy biscuits on the way.
