what do i do, to make that wonderful tomatoey , garlicy loveliness?

Def need the best tomatoes, very freash and lovely. That's were all the taste comes from. Sounds delicious.

Just whizz up some fresh tomatoes. Then drizzle plenty of olive oil on your toasted baguette, add the tomatoes and season like mad. I'm not aware that cafes here (Cordoba) add garlic - you often see them whizzing more tomatoes while you're eating. But I guess you could use garlic infused oil if you want that garlic hit.

do you fry or heat them in anyway? have some luscious vine tomatoes and a stale baguette that needs using up!

No, no need to heat them or fry. Just use fresh
