Can you give me ideas what to do with these ingredients?

Would love some advice if anyone can help. I love Indian food, and spurred on by the price of the take-aways I've been buying I went to an Asian Foodstore today...without any recipes and picked a few bits.

Fresh Coriander (Yum!)
Fresh Ginger
Fresh Garlic
Lentils
Tinned Chick Peas
Curry Paste (cheated, I know)
Coconut Milk

Is there something delicious I can make with these? I have rice and naan bread. Forgot yoghurt so will drink lots of water instead!

(And OMG it was cheap!)

I think you're looking at a curry are you not?

You can use all those things in a nice dhal.

Cook lentils - about 30 mins should do it.

drain and add chick peas and heat through till warm.

Slice ginger and garlic thinly, fry gently (don't cook too long or garlic will burn)

Stir in a good tablespoon of the curry paste

Cook for a minute or so, stirring to prevent sticking/burning

Chuck this mixture into the lentils/chickpeas

Then pour in about half a tin/packet of coconut milk and warm through.

Finally chop some (lots!) coriander leaves and chuck over to serve.

If you want to be really authentic, heat up some ghee or ordinary butter and fry some indian seeds (cumin and kalonji/black mustard seeds are good) until they sizzle and pop. Pour these over everything.

Serve with rice and if you like it a good dollop of chutney (mango or pickled aubergine)

Yummy.

Oh yes and a dollop of yoghurt on the side or make up a raita if you like it: chopped cucumber in the yoghurt, stir in some fresh mint or if you haven't got any, mint sauce will actually do!

WilfSell: THANK YOU. Just what I was looking for! Will get my "really authentic seeds" on the next trip! I have chutney, but alas no yogurt. It seems to be really quick too, great!

OMG I'm stuffed!

It was lovely, I overdid the coconut milk and underdid the curry paste(my own fault), but will know next time that coconut milk shoot out of the tin!
