anyone got a nice muffin recipe? say with apples in?

have got serious pregnancy hunger
need something i can take to work for a mid-morning snack-vaguely healthy, but definitely cakey that'll stick to my ribs and see me through til lunchtime

and preferably something that I can freeze
am thinking apples as have got a load of apples dh filched from somewhere or other

Here we go.. Aplle spice muffins:

255g plain flour
3 tsp baking powder
0.5 tsp salt
1.5 tsp mixed spice (or 1.5 tsp cinnamon and 3/4 tsp nutmeg and a pinch of ginger and cloves)
110-140g sugar (I think it's up to you how sweet you want them)
1 egg
170g finely chopped apple
150ml milk
90ml veg oil or 85g butter, melted
60-85g raisins, sultanas or chopped walnuts (optional)
OPtional topping:
3 tbs soft brown sugr
60g chopped walnuts

  1. Prep muffin tins, preheat oven to 190-200C.
  2. In big bowl sift flour, salt, baking powder, spice, sugar
  3. In small bowl, beat egg with a fork, stir in chopped apple and mlk, followed by oil/butter.
  4. POur wet into dry and stir until just combined, adding dried fruit/nuts at the end.
5 Spoon into cases, Sprinkle with topping, and bake 20-25 mins.

about how many does that make? only have one muffin tin so can do 12 at a time

I use this as my standard muffin mix and put whatever else I want in - diced apple and cinnamon, choc bits, orange rind & poppy seeds.

125g butter
2/3 cup sugar
vanilla
2 eggs
2 cups SR flour
1 1/4 cups milk

Sometimes I put half mix on the bottom of a slice tray, spread stewed apples over, then top with the rest of the mix. Lovely

Bake at 180.
