anyone got any fab recipies...i'm thinking some kind of chicken balls or something (meat needs to be disguised in some way)???

chop chicken bits up into bite size pieces. roll in egg then crushed up cornflakes, grill for 5-10 mins

get minced chicken, mix with chopped onion (optional) and some herbs, make into meatballs, grill for 5-10 mins

when ready to eat, cover with tinned tomatoes or tomato sauce

Got this one from someone on Mumsnet ages ago - my kids love it

Annabel Karmel's chicken and apple balls

3 chicken breasts or 6 thighs
1 apple
1 tablespoon of lemon juice
pinch herbs
half onion chopped finely
1 stock cube (I use a teaspoon of stock powder)
2 tablespoons fresh breadcrumbs
flour
oil

mince chicken in food processor, grate apple, add lemon juice to apple, mix together chicken, apple, herbs, onion, stock powder, breadcrumbs

flour hands and shape into 10 gol fball sized balls.

Shallow fry in oil until golden for about 6 mins.

(Also works if you bake them in the oven about 10 -15mins at 180 deg)

I use raw, but I presume that you could use cooked chicken - don't know what the texture would be like. If you use raw it comes out just like chicken nuggets

The only recipe I have for cooked chicken is chicken enchiladas - Very spicy and not suitable for kids, but very good for grownups

What about a pie or is that not disguised enough?

It comes out fine with cooked as well - and freezes fine (as long as chicken was cooked from fresh originally). I tend to fry them then freeze on a tray, and then cook from frozen for about 20 minutes in oven.
I also alter it slightly so that instead of puting breadcrumbs in, I dip in egg then coat with breadcrumbs before frying. I have also used crushed ryvita instead of breadcrumbs when I'd run out and that was lovely too.
