I never use leek/celery - spoils a taste for me.. just add carrots, parsnip, bay leaf, some pepercorns ... if you have a good quality chicken it will be lovely anyway..

I made one yesterday, with the carcass of an old chicken (sunday's dinner).

Put the chicken carcass, onions, carrots, (I normally use leeks too) all into a pot and boil it with a little salt, some pepper and bouquet garni.

Keep topping it up and let it boil for about two hours, sieve it and leave to cool, scrape the fat off the top.

Voila.

I like to put the carrots and onions back in once sieved but you don't have to. If it doesn't taste very chickeny then add a chicken stock cube.

I like non-mushed veg in chicken soup. Once you've done your stock and it tastes right, just add finely chopped cubes/strips of potato, carrot, onion, spring onion, any veg you like basically and simmer for a little while until they're done. I agree that beans are lovely in chicken soup, too - a tin of haricots is a really nice addition. I think it looks so pretty with lots of different coloured tiny cubes of veg. You can also use small pasta, pearl barley, lentils or noodles for fillingness (obv pearl barley takes quite a while to cook).
