What shall I marinate the Tuna in before stir frying...(and how long to marinate?)

Was thinking ginger and garlic, but any more ideas?

tuna stakes in

sweet chilli
lemon juice
olive oil
salt
pepper

left for a good couple of hours.
then fried

Should I marinate in the fridge, or at room temperature (does it make any difference?)

I always marinate at room temp - unless it's going to be overnight in which case it can go in the fridge. I think the flavours mix together better at room temp.

Oooo teriyaki is yummy for a tuna stir fry. There is a very good recipe in cook now, eat later by mary berry. If you would like it cat me.

To be honest I wouldn't. I think it is a stange addition for a stirfry. I would just save it for another meal and slow roast it in the oven.

when you fry the steak do you add oil in the pan?
oh is it already got the oil from the marinade sauce?

didn't need any more oil as was enough..

The sweet chilli sauce was good.. so thanks for recommending.

(didn't use the fennel.. so may start another thread for ideas on what to do with my fennel!!!)
