How do I make cherry pie filling from fresh cherries and can I freeze it?

They are going cheap in the co-op and we are going away for the weekend so it wont get eaten if I make it and then can't freeze it...Ta in advance everyone!

Never tried it but I imagine you would simmer them with a little water and some sugar until it's looks about right!! Then yes definitely could freeze it.

Agree with psw - same as rhubarb, plums etc. May need to experiment with the sugar as per your familys liking

you need cornstarch to bind it together. thicken it. otherwise you will just have a thinner cherry sauce with big bits of cherry in it...

depends how much you cook it - if you don't add much water it will reduces and thicken the longer you cook it. A spoonful of cornflour will work if it's too runny though.

If you want to put it in pie for cutting thus it obv needs to be thicker than a top-crust only pie or a crumble.
