Am in total food rut, going to be working nearly full-time plus studying soon and really need some quick, tasty vegetarian inspiration! Thanks soo much in advance - DH will be very grateful to escape pasta every night!

The "rice thing" I just discovered is quite nice:

1 Onion
6 Oz long grain rice
Half tin of tomatoes
Red pepper
Half tin chickpeas
Sweet corn, any other veg you can think of
Cheese

Wash rice. Fry onion until soft, add rice. Place in an oven proof dish. Add the remaining ingredients apart from the cheese. Cover with water until about double the depth of the rice.

Place in the oven at gas mark 5 and cook for about 30 mins. Check half way, if you think it needs more water then top up. Otherwise, grate some cheese over it and finish off for another 10 to 15 minutes.

pasta & pesto, red or green out of a jar.
cashew nut stir fry.....toasted cashews added to stir fried veg, grated ginger & garlic, sometimes with a dollop of soysauce and small amout sweet chilli dipping sauce. sometimes with a jar of hoisin sauce.

Baked spaghetti.....passatta, peppers
spanish rice.... peppers, red onions
I'm at work so don't have recipes to hand.
fried rice is always a hit in our household.
homemade pizza, sometimes made with shop bought bases.
Veg & lentil stew & dumplings.

Puy lentils braised with tomatoes and fennel. Add goats cheese/feta for the last ten minutes. Or an egg is good too. Or egg and parmesan.

Ratatouille except with chilli and black olives as a pasta sauce.

Veg chilli, wrapped in tortillas with more chilli on top and mozzarella on top and baked.

Pad thai, so rice noodles with stir-fried veg and bean sprouts with egg, sweet chilli, lime juice, coriander and chopped peanuts.

wow, just nipped back to check the thread, and my flabber has been well and truly ghasted underated! I think there's enough inspiration for a couple of months there, thanks enormously! and thanks to everyone else as some yummy ideas here! off to write shopping list now...

We use quite a bit of Quorn, eg

Quorn mince to make cottage pie, bolognaise or lasagne
Quorn pieces to make sweet 'n' sour dishes, 'chicken' and mushroom pie etc

Ready-made puff pastry is handy to make all kinds of large and small tarts/pies (huge tray size, smaller individual ones, pasties, parcels, appetiser size). Try...
Lots of chargrilled/roasted veggies on top
Mozzarella, tomato and basil
Cheese and onion/broccoli
etc etc.
Also add a few crushed nuts to a bit of tomato puree and spread it onto the base underneath the topping for a bit of extra yumminess

Veggie sausages are good too (we like Linda Macca ones, but Quorn ones are good too). Delish in a casserole with baked beans, softened onion, bit of Worcestershire sauce, few chopped tinned tomatoes or passata. Yummy with freshly made bread or on jacket potatoes. We also use veggie sausages for toad in the hole.

Pizza and quiches are quick and easy, as are veggie burgers. Serve with imaginative salad/coleslaw/rice salad/home-made potato salad etc.

Ciabatta bread charred on the griddle pan, topped with big flat mushrooms and mozzarella. Pop under the grill to melt the mozza - absolutely delicious and very easy. Nice with fresh basil on top.

Soups - the list is endless! Our kids love carrot and vegetable best.

Spinach and cheese pie made with bought puff pastry - take one large bag ready-washed spinach (or use frozen), wilt, chop, squeeze out as much liquid as you can, mix with one packet feta, crumbled. Add ground black pepper, doesn't really need salt as feta v salty. Roll half a packet of puff pastry into a long rectangle, spread the feta and spinach down the middle, cut strips down each side so that you can fold alternate strips in to make a kind of latticed parcel. Brush with beaten egg and bake in moderate oven for up to 30 mins (depending on your oven). Looks pretty enough for a dinner party and most people seem to like it.
