Nut/Seed pate spread thingy - a kind of recipe - it's yummy honest!

No actual quantities. Ingredients vary depending on what I have in the fridge.

a large handful of cashew nuts or sunflower seeds. I guess other nuts or seeds would work too.

Juice of one lemon

Large splash of soy sauce

Bunch of fresh herbs - coriander or parsley usually.

Various raw veg - eg half a courgette, half a pepper, spring onion, grated carrot, garlic, sundried tomatoes, olives, fennel, celery etc - not all at once, all optional.

Bung it all in a bowl and blend with hand held blender. Taste and add more stuff if necessary. Be careful not to add too many watery veg - eg cucumber and fresh tomato. Lovely as a dip or a spread. Very tasty and very healthy.

Less is more, the one I made today just had cashews, coriander, courgette, celery and pepper with lemon juice and soy sauce.

Mmmm. that sounds fab! I've written it down and will try it tomorrow. Celery cook book here you come!
