So far I've found (not tried any of these yet):
Dinner Lady's veg crumble
Secret vegetable pasta
Jamaican veg beans & rice
Mixed veg curry

a chef did a nice thing on This Morning the other day, fried up a load of toms, peppers, onions garlic etc... then added cooked sausages. He was using left over veg. I think you just use whatever you have but have a tomato base.

Will def give that a go - DDs love sausages (tho they'll probably manage to avoid the veg!)

Easy veggie curry:

Chop up all veggies finely, saute till tender then add a tin of chick pea dhal from Sainsbo's.

That's it. DS 18months loves this and so do i.

you could hide the veg after cooking by blending it.

Like the dhal idea, my boys like curry so will eat this.
