don't put the radishesor broad beans in. Spring onions fine. Garlic if you have any.

I hate celery and never use it in my stock, not even at work.

You can make a perfectly tasty stock using nothing but chicken carcases and onion

SOunds fine to me. I personally prefer celery but have made it without.

I don't advise leftover sprouts in stock though, for some reason they make it taste funny.
