dinner party saturday - one guest only eat's chicken...Inspiration needed!!

I love cooking and I am fairly handy in the kitchen - going to probably do a seafood starter (maybe langoustine tails with a chili mayo) and something chickeny for a main - I need some inspiration - have already done a boring roast, hunter's chicken without the bacon for her) and a casserole.....any other ideas???

Should I maybe do everything shellfish??? Pasta???

Have also done the whole veggie dinner party with her before but she now eats chicken

not averse to cooking veggie - I actually quite often order veggie when we go out - however Dh and the other 3 guys are massive carnivores - DH would not be impressed with veggie dish and as I plan on getting him to help me, need to be cooking something he will enjoy!!

Langoustines are shellfish and yes she will eat!

Chicken paprika. Kind of like goulash but with peices of chicken on the bone. Really really tasty.

Or chicken peices roasted with a lovely sticky bbq marinade, served with roasted veg.

Or fice spice chicken with stir fried veg and mounds of basmati rice.

ok going to really confuse you all now - going italian - antipasti to start, followed by prawn linguine followed by CHICKEN ??????? the tiramisu....

any italian chicken dishes you can recommend??
