As GB has told us all off for wasting food can someone please give me a recipe

for Chicken and veg Soup, made from the bones off a Roast Chicken I made for Dinner tonight. Thank you.

I strip the chicken off. Then boil up the carcass & skin in a pan with the lid on for about half an hour.

Boil floury potatoes and carrots separately.

Strain the liquid off, skim off the fat, add the chicken, pots and carrots and simmer for an hour or so, add salt and pepper.

My mum's way!

Of course you can add any veg you like.

I also sometimes add red lentils and borlotti beans.

yum...or if you get bored with chicken and veg soup, you can do chicken noodle soup (boil carcass with some garlic and ginger chopped/grated in, strain and skim as above, chop in some sort of greenery and herbage found at bottom of fridge, add bits of cold chicken and pack of those straight to wok noodles.chop a bit of chilli in if you like)
or strip, boil up, strain and skim chicken as you like and use the resulting stock (maybe with a squeeze of lemon and a bit of carrot and onion in with the bones) as a base for risotto with bits of chicken stripped off it and maybe some mushrooms if you've got it. or peas if not.
i am v keen on making chicken stock, as you can possibly tell. dh thinks it is the act of a madwoman and cant stand the sight of bones boiling and says things like (sighs heavily) you can BUY chicken soup in TINS
