best veggie dish ever from good food mag,may 2000

serves 4, takes 1hr 20 mins

5 tbsp fruity olive oil
750g ripe cherry toms
2 tsp dried oregano
2tsp golden caster sugar
6 tbsp fresh red or green pesto (i never use the fresh as too expensive, i prefer red from a jar)
225g soft rindless goats cheese (i use welsh log stuff)
12 fresh lasagne sheets
350g ripe vine toms sliced very thinly
3 tbsp freshly grated parmesan

1.preheat oven to 220C/fan 200C.oil shallow baking dish,halve 250g of the cherry toms and set aside.heat the oil in a frying pan and add the WHOLE cherry toms, cover and cook over high heat, shaking the pan for 5 mins.add the oregano and sugar and season.

2.beat the pesto into the goats cheese, lay out the lasagne and spread the cheese mixture over each sheet.top with tomato slices and roll up like a swiss roll.

3.spoon half the frying pan mix onto bottom of baking dish, arrange the swiss rolls on top and spoon over remaining frying pan mix. scatter over the cherry tom halves and cover with foil

4.bake for 25-30 mins, uncover sprinkle with cheese and bake for 10 mins.sprinkle with basil

NB mine always needs 45 mins to cook but have shit oven, make sure you check the middle is piping hot before you put cheese on for last 10 mins.
