I make a yummy and very simple summer pasta dish, which is just crushed dried chilli, anchovies and garlic melted in olive oil then tossed with spaghetti and a bit of chopped parsley. It's delicious.

this one never fails - dead easy, too

roast cherry tomatoes in the oven
cook diced garlic & red chilli in a pan, Remove from heat, toss cooked prawns (just the supermarket ones, but not the bitty ones that belong in fried rice) through the garlic, chilli and oil.
Cook & drain pasta - spag or linguine works best
toss all together with rocket, basil & lemon juice

if you want to ponce it up a bit, buy some jumbo king prawns and top each dish with one or two.

serve with lots of white wine and bread

delish!!

ready rolled puff pastry, score a margin around the edge, pierce the middle bit every so often spread with pesto add sliced veg e.g. toms, courgettes, peppers, mozzarella & parmesan on top, bake, yum!
