I need a vegetarian dish to take to a BBQ

What can I take?

It needs to be able to travel well.

I usually bake but need to take 'real' food.

Am stuck

Cous cous with feta cheese, lemon juice and peas. Always goes down well at our BBQs.

will you be BBQing the stuff when you get there, or a cold dish? I always love halloumi on kebabs with things like mushrooms, cherry toms, peppers etc

How do I put halloumi on a kebab? Won't it melt?

I am not bothered if it is something I bbq or a salad. It just needs to be easy and imnpressive. Will go shopping later. Thanks all

sweet potato and onion skewers:

chop up sweet potatoes into big chunks

chop onions into big chunks. You need half quantity of onions as sweet potato.

Marinate them overnight or for a few hours in a mix of olibe oil, crushed garlic, salt, pepper and a sprinkle of cinnamon and some finely chopped chilli if you want.

Thread onto skewers. Before bbqing, brush with the marinade and keep bruching the marinade on while they are cooking.

Haloumi will cook and change texture, but not actually melt. Just chop it inot big chunks.

my fave rice recipe is -

sweat half an onion down. When it is done add into the pan half a teaspoon of cinnamon and the same of coriander. Stir together and then add a handful of raisins or currants and a teaspoon of orange or rose flower water. Leave everything in the warm pan so the the fruit soaks up the juices and then add some (already cooked) rice - basmati or thai are nice - and flaked almonds.

I make this to use up our rice leftovers as i cannot judge quantities for the life of me. It's delicious cold with salad and something off the barbie

If I do mushrooms and cheese and toms on a kebab, do I marinade?

Am thinking kebabs of some kind (or maybe 2 types) and couscous salad.

I make a salad of puy lentils and feta cheese with chopped red onions, tomato, cucumber and lemon juice and olive oil.

It's very nice and quite healthy too.

no, don't marinade
you would need to cook the halloumi at the party, not in advance
it's fab stuff - very salty - but moreish, and a sort of intriguing squeaky texture

I didn't get that one from it, but if in doubt I always find somethinig in Leith's Vegetarian Bible. Its the best cookbook ever!
