Uses for ricotta

So I bought a tub of ricotta to use with spinach that needed using up…and I still have half a tub left.
Any ideas that aren’t pasta?

Lemon ricotta cake. My Italian Nonna-in-law makes it, no recipe to share though it’s all in her head.

Manicotti

It’s only half an ordinary sized tub so not loads! Just don’t want to bin it

Stuffed mushrooms with a ricotta, garlic and spinach mix? Or just spread it on toast - I add some sliced tomatoes and spring onions with salt.

Ricotta hotcakes (Nigella has a recipe)
In place of cream cheese in sandwiches etc.
On toast with honey for breakfast.

I really want to make the hot cakes but I think it will be the mushrooms! No spinach as I’ll end up in another cycle of using things up!

It's great in meatballs. Mince, ricotta, a little sparkling water, oriental spices. Makes them light, fluffy, and they hold together without a heed for eggs or breadcrumb.

My favourite WFH lunch!
Ricotta spread thickly on toast
Top with room temp sliced tomatoes
Salt & pepper
Drizzle of olive oil
Fresh basil leaf if you have it
