Buddha bowls and similar - any recommendations?

I recently came across this recipe for glow bowls and we all enjoyed them. (Link gives 20 recipes from Em the Nutritionist and the glow bowls are the ones in the picture at the top of the article. The person who recommended her recipes to me said (understandably) that Em doesn't look like someone who eats or cooks, but whether she does or not I like her recipes and am planning to try out several.)

This has set me off on a quest for other bowl recipes. I love this kind of food, especially as it usually means I have leftovers in the fridge for lunch for another day or two. Tonight we are going to have these: https://www.feastingathome.com/bali-bowls-with-peanut-tofu
If these are good it will be the first time I've ever succeeded in making tofu into something tasty!

Any other suggestions? I've bookmarked various other recipes, including:

This one also looks good - borrowing the rainbow carrots to add to tonight's meal: https://www.loveandlemons.com/buddha-bowl-recipe/

The above are all vegan (we're not but we don't eat much meat). This one has chicken:

Her cookbook, So Good, is a Sunday Times number one best-seller.

We eat Buddha bowls a lot, although once I'd 'discovered' the principle, I don't follow a recipe usually.
Ours tend to be:
Brown rice (love the microwave packs)/couscous/quinoa/those grain pouches
Courgette ribbons (sometimes marinated in different flavours:garlic/lemon, soy/chilli)/slices of radish/edamame/spring onions/peppers etc - salary stuff.
Roasted squash/sweet potato/miso aubergine/mushroom
Tofu/chicken/salmon
Dressing to match the leaning of the bowl - tahini/lemon type, sesame/lime/soy, vinaigrette type etc.
Obviously not all of each section simultaneously!
Re the tofu - I love tofu but don't like it when it's smoked/baked/too hard. I like it best cut into cubes straight from the pack and fried till a bit crispy on each side, but still soft in the middle then added to other ingredients/dressing.
