Veggie sandwich fillings

I'm vegetarian and I'm hotdesking with someone at work with severe allergies to nuts, sesame and egg. So all of these have been banned from my lunchbox by our H&S team.

I also try to avoid UPF so I haven't gone down the route of quorn ham, vegan mayo etc but getting quite desperate now!

Can anyone help with sandwich ideas? I am stuck in a loop of Cheddar and lime pickle, cheddar and Branston pickle, and Brie and mango chutney, and cream cheese with sun-dried tomatoes.

Tried AI and got some very vile suggestions which surely no human ever eats (e.g. mashed avocado and miso . . . I tried it but yuck!) Plus some things that would take ages - I will not be grilling aubergine in my office kitchen!)

Appreciate suggestions- I have quite broad tastes, my only major dislike is aniseed flavours e.g. fennel. It needs to already be ready in the morning to go in my sandwich and sit there till 12ish.

Roast peppers, hummus and red pesto
Halloumi (warm) sweet chilli and rocket.
Onion bhaji, sweet chilli mayo and cucumber
Cream cheese and cucumber
Edam/port salut with coleslaw
Falafel, hummus and iceberg lettuce.

A simple salad sandwich but with mashed avocado as really thick "butter" to add some moisture. Same again but with cream cheese as thick "butter".

Does it absolutely have to be sandwiches? If not, how about a clip lock tub full of cold cheese and pasta salad?

I know you asked specifically for sandwich fillings but would you consider anything else? I often take a Greek salad for my lunch, actually I mostly take a wide variety of salads but Greek is my fallback option as I always have the ingredients for it in the fridge.
dressings sit separately in a little container as I don’t want leaves etc going soggy.
I don’t ever take sandwiches because the textures go a bit funny within a few hours tbh.

I just love sandwiches and I make my own lovely bread buns! Hence why sandwich fillings.

Occasionally I do take pasta salad too but mostly I just prefer a sandwich.

You need protein, so if eggs are off the menu it's cheese or pulses really. Fortunately there are lots of different cheeses, branch out and add interesting things like roasted veg. Hummus and refried beans are also good.

Got to admit think hr are a little better reaching here, there should be stricter cleaning standards, or you each have own keyboard and mouse or colleague gets their own desk..

I love a houmous sandwich, sometimes on its own, sometimes with a bit of cumcumber, a little salt too.

M&S used to do three lovely sandwiches (they may still do - I don't know!)

Wensleydale and coleslaw (although you'd have to make it with salad cream or just a vinaigrette if you can't use mayo)
Cheddar, celery and salad cream
Roasted vegetables (aubergine, peppers, onion and courgette) - easy to do a load of these at the weekend and then make your sandwiches as you need them during the week.

Do you eat lunch at your desk?

I think this sounds really unfair (on the person with the allergies, and that's what I'd say to your HR) as they're relying on you remembering and never accidentally contaminating a keyboard or mouse.

Are these things eaten generally in the office?

I think the allergy sufferer should have a desk for just them. To avoid any risk of contamination.

I also think that the company has a responsibility to make adjustments for the allergy sufferer that don’t include other colleagues being limited to such an extent.

OP - try vegan mayo as a substitute. TBH you can’t really tell the difference in a sandwich. That would open up a world of options.

Have a look at the Bombay sandwich - that’s nice.

Making up your own hummus is really easy and you could just leave out the tahini.

Grated carrot with grated cheddar, poppy seeds and coriander.

Whipped feta with some chilli flakes. Sliced cucumber.

Lotus root with tamarind and green salad leaves.

Marmite and tomato.

Veggie sausages, pre cooked, with brown or tomato sauce.

Pre roasted veg selection with chick peas in harissa.

You can make a dip like hummus with any beans and no tahini, just lemon juice and oil. Use that with grated carrot or salad veg.

Guacamole and salad.

Mozzarella and home made pesto if the nut allergy doesn't include pine nuts. Can use any greens for it, I like a mix of spinach and parsley.

Brie and cranberry sauce.
Cheddar and tomatoes with black pepper.
Stilton with red onion chutney or, if you can find it, sloe chutney.

Making up your own hummus is really easy and you could just leave out the tahini.

Some good ideas here. As peanuts aren't actually nuts she might not be allergic to them (check obviously) and peanut butter is a good substitute for tahini in hummus.

But tbh, I'd be asking if a separate area can be made available for you to eat your lunch or for her to be given a separate desk rather than restricting your lunch so much.

Chickpea and pickles blitzed together - this is lush or
Chickpea and avocado with dill and finely chopped red onion.
Or chickpea mixed with Greek yougurt and a bit of mild chilli powder.

You shouldn't have to eat at your desk anyway. One of if the nicest sandwiches I have had was chilli bread with cheddar and mashed kidney beans.

This sounds incredibly unfair. Can't the allergy sufferer have a separate space. Does everyone in the office have to adjust their lunch to such a limiting degree?

Mashed chickpea and sweetcorn salad (kind of like tuna and sweetcorn).

Vegan mayo in any sandwich.

Veggie sausages.
