Ideas for leftover roast beef please

We had roast beef on Sunday and had more of it yesterday with roasted veg and new potatoes. There's still a decent chunk left unsliced and I'm fresh out of ideas. I've been under the weather for a couple of weeks and I'm not really thinking straight.

Could I ask for some suggestions please, thanks. It is brisket.

Cottage pie? It was originally a way to use up roast beef.

Just chop it into bits and use in a curry or stir fry? Or make a stew with some dumplings?

Cottage pie - and it’s a lovely comforting meal, so ideal if you feel under the weather.

But otherwise, cooked roast beef lasts for days in the fridge. And roast beef sandwiches are the best! In a baguette with rocket and mustard mayonnaise is my favourite. I sometimes do it with pickled veg and coriander for a banh mi style sandwich too.

Thanks for the suggestions. We do eat cottage pie regularly, and it would be for tonight's evening meal so not sandwiches. @weebarra Stovies sounds interesting and I've never made that, so I'll have a look at the recipe.

I was trying to avoid curry and stir fry because we have those nearly every week anyway. Please do keep ideas coming.🙂

Pasta. Make a tomato sauce and add beef rosemary and feta.

I've remembered we have loads of peppers in the fridge, some paprika and tinned tomatoes so I'm going to do a goulash and have it with rice.
