Em the nutritionist on Instagram has a really good simple chicken minestrone recipe. Basically it's a modern riff on Minestrone. Called one pot parmesan & bean soup. The pickled chillis are delicious on it.

We don't put the bread in the bowls, but either have bread on the side or add some tiny pasta (but note that it doesn't keep with the pasta in, so only add the pasta to what you will eat that day).

It freezes really well too.

A tip I have learnt from Italian friends is to keep parmesan rinds in the freezer. You can then add a parmesan rind to soups like this for extra depth of flavour.
