What would you use to ‘sandwich’ and decorate shortbread?

I am making an alternative birthday ‘cake’ for DH this year from shortbread, because it’s his favourite.
I want to make two or three 7” round layers so it is more cake like in appearance. I imagine that if I buttercream them the shortbread will just absorb all the oil and end up very greasy.
Should I just use water icing?
Any other ideas?

I’ve been sending regular shortbread to my friend 400 miles away for the last two months.
To minimise breakages in the post,I’ve gone square and rectangular instead of rounds.

Could you make squares instead of rounds to make yours more formal?
Can you make fingers to act as fence posts.
And yes, I’d use water icing.

This recipe is amazing :
250 g butter
350 g plain flour
50g semolina stuff
60g soft brown sugar
Food process till it comes together in a ball.
I then divide it into smaller balls/ flatten it / . Put greaseproof between the layers
Please post photos.

I would paint the bits you’re going to sandwich with melted chocolate to seal them and stop them going soggy, then use whatever you like in between.

I wonder if a thick lemon curd might work? A runny one would probably make the shortbread soft, but a thick/stiffer one might be ok? If it were a bit sharp it would provide a lovely contrast to the sweet, buttery shortbread.

I’d use jam or chocolate spread. Or both.
Actually , 3 layers with cherry jam in one and dark chocolate spread on the other. Black Forest shortbread cake. Thank you for the inspiration!

Thank you all for such brilliant ideas! I love the idea of lemon curd.
I think I'm going to paint on a thin layer of white chocolate onto the shortbread to seal it and then a layer of that really tangy Sicilian lemon curd from M&S.
If I poke some holes into the shortbread before baking it, I can even poke in some
candles!
