Does anyone have any good beetroot recipes?

My dad has given me a load from his garden, looking for some inspiration to make with them.

Pickled, wirh a roast dinner, in salad with feta, in hummus.

Borscht is nice. With sour cream. And very good for your complexion!

Roasted with other root vegetables.

Ive always wanted to make Tyrells vegetable crisps too as the beetroot ones are my fave.

Chocolate beetroot cake is divine. Beetroot risotto is a family fave, just blitz the cooked beetroot with the stock and cook as usual. I've used the beetroot stock for beetroot cheesy pasta too

That looks gorgeous. Fab colour. Will be trying it, nearly bought a bunch of beetroot this am, regretting not now. I love them roasted then made into a salad, cous cous is good.

Roasted, then skins slipped off when warm. Slice and lay on a platter, drizzle with olive oil and balsamic, salt and peoper. Crumble over feta and add a few bits of rocket or watercress.

Beetroot and orange is lovely in a salad. Not got a recipe, sorry but Google should throw something up.

Salad. grate raw, also grate raw carrot. Add a bit of orange juice and harissa, crumble in some feta, and sprinkle with chopped parsley. Colours are lovely

Oh also Beetroot ketchup. Google recipes but basically similar to tomato ketchup in what you can use it with.

I also love a slice of beetroot and a fried egg in a burger but I might be weird (I think it might be a Kiwi thing?)

I had beetroot curry in Sri Lanka which I really enjoyed.
I found a recipe on line, but haven't cooked it yet.

It doesn't use very much but I like the effect. Put some raw, grated into a coleslaw mix, leave for a while in the fridge and you will have pink coleslaw. Or Barbie Coleslaw, as I call it.

cut into chunks (use fresh not pickled)
Place in oven dish with chickpeas, onions, garlic, curry powder/paste and oil
Bake for 20-30 mins
Stir in 1 can of coconut milk

Absolutely delish and very easy

I also like a salad of raw beetroot, feta, orange, dill, olive oil, salt and pepper and a balsamic drizzle

I drizzle the beets with honey when I roast them as well as adding to the dressing.

We had this tonight for tea (minus the walnuts as DH isn’t keen). It was lovely, thank you.

My mum’s beetroot chutney was amazing, but sadly I don’t have the recipe. I’m sure you could find one online
