Anyone have a fool proof apple cake recipe. I have an excess of Pink Lady apples which I'd use. Last attempt sometime ago turned out to be very crumbly and difficult to cut. Loaf shape or round cake would be ideal if anyone has a perfect recipe please.

this! I’ve made it twice in the last couple of weeks. wrap it and store in the fridge, it just gets better over a day or so

I posted a link, but think it’s under review

I often make Delia Smith's chunky apple cake.

This recipe is from Oldstyle board on moneysaving export, I've been making it for years as either a round or a loaf and it always comes out well.
Aunty Sallys Apple Cake

8oz self raising flour
4oz marg or butter
4oz castor sugar
8oz roughly chopped apples
4oz saltanas
juice of half a lemon (soak the apples in this once chopped)
2 med-large eggs
2 tsp cinnamon

  • 1/2 tsp gingerMix flour and marg til it resembles breadcrumbs.
  • Add all other ingredients
  • Let sit for 5 mins
  • Grease tin
  • Place in tin (push up bottom type if available but not vital)
  • Cook at 180 degrees Gas mark 4 for 1 - 1 1/4 hrs or til a knife pulls out cleanly
Delicious hot as a pudding with custard or cold as a deliciously moist cake.

8oz flour, 4oz butter/baking spread, 4oz brown sugar, 1oz sultanas, 2 large eggs beaten, 1 tsp baking powder, 3 cubed apples. I usually make muffins rather than loaf cake

Yum. Place marking this.

Marking a spot!

Also place marking
I made an apple cake a while back cannot remember what recipe I used but it was delicious.
Top Tip - a sprinkling of Demerara sugar on top before baking , makes it crunchy

Rick Stein's German apple cake. The recipe is on the BBC website. I make this many times each year, often by request! It's excellent and also pretty quick and easy.

I found this super healthy and it feels quite healthy- for cake!

2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon kosher salt
1/2 teaspoon cinnamon (optional)
2 large eggs
1/3 cup honey
4 tablespoons coconut oil
130 gram, 5 Oz (1/2 cup) greek yogurt
2 teaspoon pure vanilla extract
2 medium apples
1/2 cup chopped pecans

I more or less follow the recipe except I’ve never added pecans.
