Any good slow cooker recipes for sausage casserole, I fancy making it tomorrow but have never made it, anytime I try make something in the slow cooker it goes really watery and thin where sausage casserole is supposed to be thicker (the ones I’ve had) any tips would be e great

We just do it with normal gravy granules. I make it thicker than you would of you were just pouring it, as it thins out as you cook. I just stick whatever veg in we have and some spuds

I say we.... my husband makes it all fancy with wine and herbs and stock and whatnot. The kids prefer mine 🤷‍♀️

On the hob, or in the oven, liquid evaporates & the sauce becomes thicker.
But it doesn't in a slow cooker, so you need to use less liquid.

If a sauce is still thin, I find the easiest thing to do is remove the liquid into a saucepan & boil it.

@incognito1991 Not a slow cooker recipe per se but I think it would work in one. It's quite thick anyway so just don't add any extra water. It's our favourite sausage casserole recipe which I've made countless times

The Hairy Bikers' sausage casserole is like a big hug on a cold winter's day! Warming and filling, it's the ultimate comfort food.

I have saved this to try, looks very tasty and I think mone would love it. What do you serve it with?

You can thicken runny gravy in the slow cooker with dehydrated mashed potato granules/smash. I find that adding extra gravy granules can make it far too salty so this works a treat for me.

I find leaving the lid off the slow cooker towards the end or placing a clean tea towel under the lid to catch the moisture can help to stop casseroles etc becoming too watery.

A cornflour slurry works well towards the end, 1 tbsp cornflour + 1 tbsp cold water. Then keeping the lid off for the last 30 mins

We've had it with just plain boiled potatoes or nice crusty bread, and sometimes some green veggies as it's quite rich. But mostly, we've just had it as is. Hope you like it

When you’ve browned things you add flour and stir it up to coat it all before adding the liquid. That’s how you get liquid thick.

I was going to recommend the hairy bikers recipe already posted. I make it with vegetarian sausages and several different beans and it’s lush. Serve with twice baked spuds or crusty bread.

Add red lentils to absorb excess water. Not noticable taste wise and healthy too.

My recipe is proper lazy. Chuck it all in.
Sausages
Can of tomatoes
Can of beans (inc the liquid). Borlotti or mixed is nice.
Flavour packet (these actually thicken the sauce anyway)
Cook for 6h or so
Add red lentils and cook for another 30mins if needed
Done!

Ohh that does sound far better than rice as the recipe says. I will try it with veg and crusty bread first 😋. Thank you .

I was also going to post that bbc hairy bikers’ recipe. We have it with jacket potatoes.

BretonStripe · 01/09/2026 07:04

Ooh, thanks for this. Will try the Hairy Bikers recipe soon too!

I'd recommend skinning the sausages first. The skins can go really tough in a casserole.
