Help with slow cooked beef recipe PLEASE

Hi everyone, having friends over tomorrow and my husband got a piece of beef from our local butchers. Our oven needs to be replaced so I will be cooking it in the slow cooker, I need a recipe that will make the meat melt in your mouth/fall apart but wont dry it out?
Im quite a good cook, make my breads/cakes/sauces/pasta from scratch. But roast beef is something I always get wrong
Slow cooker has both a low and high setting and I can cook it for max 9 hours as I just wont have time for any longer
Any & all help would be greatly appreciated!

Higher quality can go in the oven, lower quality can be seared in a pan and then slow cooked for 5 hours.

Just stick it in the slow cooker. Maybe add salt and pepper. Just leave it, it will be fine.

For most meat in a slow cooker I think you need a bit of liquid - for beef, I’d go for a couple of glasses of red wine which will certainly avoid dryness. You could also add some seasonings like star anise, juniper berries and mustard (grain or powdered).

I sear the joint first and cook it on low for around 5 to 6 hours, I don't add any liquid.

Garlic in frying pan with olive oil and freshly ground black pepper. Sear the meat on all sides. Put in slow cooker. Pour some red wine and water into pan and heat and stir in all the bits of beef etc left behind and then pour the liquid into the slow cooker, maybe half way up meat or so. Leave to cook on high for 30 mins turn down to low. Add some herbs (dried or fresh) if you have some.

I always cook any cut of beef this way. Sometimes I use dark ale instead of wine.

I always do my beef in the slow cooker. Just put it in and cook on low for 8 hours. Don't need any liquid, it will be tender and delicious!!

The key thing to it not becoming dry is to let it sit in the slow cooker in the gravy and cool down for a while. I would use the beef to make something like beef casserole with onions, carrots, celery, garlic, thyme, S+P, Worcestershire sauce, mustard powder, beef stock and a good slog of red wine. Really brown the beef first and heat up the liquid ingredients in the pan used for browning before pouring over the beef in the cooker. Cook it slowly on low for 8 hours, leave to cool down then once cooled, pour the liquid into a saucepan and thicken however you like. (I love using Bisto powder - NOT gravy granules ). Put the meat back in the sauce to reheat.
You could cook it overnight btw!

I'm sorry, but the key thing to stop it getting dry is to make sure there is enough fat. If it's a lean cut, like topside or brisket, add some bacon or lardons while it's cooking

Of course you can. Lots of us do it. I have been doing it for 40 years.

You can't crisp chicken skin or make crackling without using something else but roasting is fine.

Thank you everyone. My husband is not sure what cut he got, he asked the butcher for a nice piece of beef for 5 adults and they cut him something as he was there at opening and the display was not stocked yet, he dropped it home and we have been out of the house since (we wont get home until morning) so that is a worry too. He forgot the oven needed to be replaced as it just started acting up during the week.

If its a lean piece of beef and I try it in my oven if I can get it working, what would be the best way to oven cook for a melt in the mouth beef?
