Cooking chicken for freezing

I had a new freezer fitted today and didn’t know that you have to leave it to stand for 4 hours before using. I’d run the old one down so there wasn’t much to defrost except for quite a large box of mini chicken fillets which I don’t dare re-freeze.

I’d like to cook them to freeze cold so can be used for when I need some cooked chicken. What’s the best way to cook them for re-freezing? I can’t believe that I’m having to ask such a novice question but I’ve gone blank 🙈!

I usually fry the whole breasts in a stovk pot just to seal them, then add in about 100mls chicken stock, lid on and steam them till cooked. Then shred and bag up so I can just grab handfuls of the shredded chicken to add to sauces as needed

Just check the fluid levels so it doesn’t dry out - that amount works for me as there’s always some water that comes out of the chicken initially and you don’t want it swimming in the stuff! Does depend on how much you are cooking/ size of pot.
