How do you stop eggs sticking to a stainless steel pan?

My eggs always stick to my stainless steel pan, even when I try those online tricks like heating it until water dances on top.

Any tips would be great!

Get a non stick pan?

Put the oil in the pan and heat up, then swirl the oil around the pan making sure all sides are covered, this is about 5-10 seconds. Then immediately pour the eggs into the pan and turn down the heat slightly. I swirl gently and depending if it is scrambled or omelettes flip or stir.

I also have a small Tefal titanium pro pan. Nothing, and I mean nothing sticks to it and I never use oil or butter etc I just dry fry. I use it mostly for fried and scrambled eggs. No way would I waste my time faffing around with a stainless steel pan, I've had too many disasters with them already! OP treat yourself to a non stick, it doesn't have to be massively expensive but it is so worth it.

This is the answer. I have stainless pans for everything but I keep a ninja pan just for eggs.

It needs to be a lot hotter than you think, esp for frying eggs. We have a non-stick egg pan for frying and omelettes.

Yup, I am sure there's a useful way to do it, but I just buy cheap non stick pans from sainsburys and replace every 18 months or so.

Presumably OP doesn’t want her egg with a side helping of the toxic forever chemicals in a non stick pan or she would have bought one instead of posting her specific question on MN. 🙄 OP you need loads of oil.

Lots of non stick pans are non toxic now.

Oil, thin layer heated till smoking basically seasoning the pan then more oil on top, add the egg and turn down the heat

Very thin, well seasoned pan.
Heat until hotter than the sun. Small amount of oil. Add egg, and turn heat down. You basically want the egg white to bubble when it hits the pan.
