Ideas for quick, flavourful vegetable meals for one without butter or sauces

I live alone and am looking for quickly prepared meals just for me. I often cook vegetable and grains and have with salmon or on their own.

My problem is that I want to make the meal tasty, rather than bland. I'd prefer not to add butter or stock cubes or canned sauces. Advice needed please

I don't use stock cubes or commercial sauces.
I make stock from chicken carcasses.
Sauces are all home-made, & I freeze in suitable quantities, e.g. tomato, bbq, pesto, sweet & sour etc.

Ratatouille? Or roasted vegetables in olive oil with garlic and dried herbs? To be honest I usually just steam vegetables and toss them with olive oil, seasoning and a squeeze of lemon or lime juice. Or stir fry with garlic, soy, honey and ginger - would be nice with salmon and rice.

Roast Med veg - red pepper, courgette, onion, tomatoes, aubergine, garlic cloves (skin on), drizzle with olive oil

Veg kebabs - similar to above but brush with an olive oil, chopped garlic, lemon juice and oregano marinade (plus s+p)

Courgettes are a lovely thing to cook in a frying pan over a lowish heat, with a little olive oil and cayenne pepper (small amount). I throw in a few prawns, some grated parmesan, and eat with pasta.

Fry mushrooms and onions, and a bit of garlic. Add some mixed herbs and then milk (I use oat milk but I'm sure any milk would be ok) and a little mustard once the veggies are cooked, so a kind of stroganoff type sauce. Mix pasta through with some kind of cooked protein. (I use cooked tempeh, tofu or beans, DH adds cooked chicken.) I think it would also be nice just with grated cheese on top.

Oh, and I sometimes add some chopped greens or kale which have already been wilted down separately in a bit of water at the end of cooking, so when I'm mixing through the pasta and tempeh/beans/chicken etc. (I wilt them separately in a saucepan while the rest is cooking.)

Garlic and onions can add flavour as can pesto.

pomegranate molasses or balsamic glaze on roasted veg is nice. With some grated parmesan on the balsamic.

Lemon, parmesan and garlic.

olive oil, lemon and herbs.

Harissa stirred in to whatever veg.
