Courgettes

I’ve been given some courgettes from allotment by my stepdad but unsure what to do with them. Normally they go in ratatouille, stir fry or courgette soup.

What else (simple) could I do?

I've just made brownies with them and courgette, sundried tomato and sage scones. Both are absolutely delicious.

Go to BBC Good Food website & search for courgettes. I use both the fruit cake & chocolate cake recipes.

Also make courgette & halloumi fritters, courgette & ricotta lasagne & also slow cook them till soft with onions & mush them down with some cream & seasoning as a pasta sauce.

I make stuffed courgettes.

You hollow out the courgettes cut lengthways, then finely chop the inside bit along with garlic, breadcrumbs (with shop or home made bread but not the ones in a packet), herbs and seasoning.

I add hot ayvar to the courgette 'boats' then shove in the filling and squash it down. Add a drizzle of olive oil and a bit of parmesan if you like.

They take about 45m- 1hr on gas mark 6 in oven.

I did go there but some of those recipes are complex. I don’t fancy shopping or only if I have to.

Grate with garlic and sauté for five minutes before stirring in to pasta with pesto. Even better if you add burrata. I sometimes throw in spinach or edamame beans too.
Fritters are good too. Make with gram flour and baking soda. Added sweetcorn is a bonus. Love a free allotment meal.
Now has anyone got any recipes for surplus spuds and beetroot?

I'm not really a baker, so no interesting sweet things. We grate them, saute with garlic then add creme fraiche/soft cheese and lemon to make pasta sauce. Or use a veg peeler to make thin strips - I use as a noodles alternative with a dressing, or in place of pasta to make cannelloni or lasagne.

I really don’t like courgette savoury. The texture is horrible for me. But in cakes / sweet things they are quite delicious. My mum makes courgette carrot and honey muffins. With a cream cheese icing.
She grates or shreds the courgette really well so I never notice the texture.

Grate, salt and squeeze as much water out as possible

  1. Fritters: add plain flour until you get a mixture you can handle. Fry on medium for a couple of minutes each side. Can be tweaked with cheese, chili etc
  2. Korean style pancake: a cup of courgette as per above + a small can of tuna + a beaten egg. Fry on medium for 2-3 mins each side. Drizzle with sesame oil, serve with toasted sesame seeds and chopped spring onions on top

Also: add small fried cubes to omelette, scrambled eggs, soups and stews

I’ve seen them sliced, fried then used on pasta, with butter, pecorino and basil.

Cut into chunks and roast in the oven with any other vegetables to go with whatever meat or fish you’re having.

I’ve got loads that need using. I’m making frying pan lasagne.

Chop up about 3 courgettes and put in a frying pan on a low heat.
Put about 5/ 7 broken lasagna sheets on to boil.
Drain the sheets and put to one side.
Make up a simple tomato sauce (onion, celery, carrot fried off then a tin of chopped tomatoes and seasoning and herbs as you see fit.)
When the sauce is ready add to the pan with courgettes, stir through and then add lasagne sheets. Stir through. Put mozzarella on the top and put under the grill. Add seasoning/herbs.

Fritters as above (I like to add feta, onion, peas, mint and coriander, and eat with mango chutney, but anything you've got around would work)

Courgette egg slice - similar idea, great to keep in the fridge to snack on or for lunchboxes
