Looking for a good chicken satay and peanut sauce recipe

Has anyone got a great recipe for the peanut sauce that goes with chicken satay? And/or a great recipe for the chicken satay itself?
I'd be very grateful if you'd share it with me.

I use this recipe as the chicken marinade, but also add a generic curry powder mix which already has the turmeric in it. www.taste.com.au/recipes/satay-chicken/90f41adf-872f-47ee-8fe0-3d5c3f65d288

For the satay sauce, I get a screw top jar and add:
-Approx 3TBS peanut butter
-squeeze of sweet chilli sauce
-Approx 1 TBS light soy sauce
-Approx 1/2 TBP sesame oil

Depending how thick the peanut butter is, I then thin it out. IF I have left over coconut milk in the tin not used in the marinade, then I use some of that, otherwise some warm water works too. Add a few tablespoons and shake the jar. If still too thick add more till you get the consistency you want. Generally I like a thick, honey consistency and often serve with both black and white sesame seeds on top 😋

Jamie Oliver's recipe is lovely - it's from his 30 min cookbook (links not working for me today, apologies).

Satay Sauce

100 g dry-roasted peanuts (chopped quite finely)
25 g creamed coconut (finely chopped)
1 tbsp Soy sauce
1 tbsp tomato purée
1 tbsp rapeseed oil
2 tsp light muscovado sugar
1 tsp cornflour
1 tsp lemon juice
1 smidgen cayenne pepper

  1. Put all the ingredients into a small pan with 150ml water and bring gently to a simmer. Cook for 5 minutes, then set aside to cool. You can reheat it to serve, or put in straight into a serving dish.to eat at room temperature with your satay sticks.
