Using up tomatoes

I’ve got an excess thanks to ordering too many Isle of Wight ones and my neighbours also leaving me a glut! They’re all cherry ones and I’ve been eating them like sweets
any easy quick recipes? I don’t eat chicken but anything else is fine

Do you have any stocks or pillary where you live?
If so it is great fun throwing your surplus tomatoes at the 'ne'er do wells'.
We would, but there are no local stocks, so are forced to chuck ours at the Telly. A bit messy but still grea0t fun.

My New Covent Garden Soup Co recipe book (bought a used copy for £1 - Amazon) has some great tomato soup recipes. Here's their basic one:

Ingredients and Preparation

  • 1 kg ripe tomatoes, halved
  • 1 medium onion, chopped
  • 2 to 3 garlic cloves
  • Fresh basil leaves
  • 2 tbsp olive oil
  • 500 ml vegetable stock
  • 50 ml double cream or dairy-free alternative (optional)
  • Salt and black pepper to taste

Cooking Instructions

  • Preheat your oven to 190°C (375°F).
  • Place the tomatoes, onion pieces, and garlic on a baking tray.
  • Drizzle with olive oil and scatter basil leaves on top.
  • Roast for 45 minutes until soft and slightly charred.
  • Transfer the roasted mix to a large saucepan.
  • Pour in the vegetable stock and bring to a gentle simmer.
  • Blend with a stick blender until completely smooth.
  • Stir in the cream, season with salt and pepper, and serve hot

I have the same issue but grown in my garden. Chutney and ketchup? I had a tomato jam once which was devine. It was sweet, not savoury, and delicious on toast instead of regular jam.

I tend to just boil them down then freeze into bags and use instead of tinned tomatoes in shepherds pie, Bolognese etc.

Spend a morning making tomato sauce. Roast the tomatoes first, and then cook with garlic, onions, olive oil. for hours. freeze in the smaller IKEA zip lock bags, flat. once they’re frozen you can ‘file’ them upright in your freezer, taking up less space.

Use in future for chili (add chili flakes when you cook), shakshuka, pasta, beans, tomato soup, pizza night…..

I also stew them or roast them, put in bags or tubs, freeze. I don’t add anything, if they’re plain you can use them for anything later on.

There's an Ottolenghi recipe called Surprise Tatin which is tomatoes, potatoes and goats cheese in a tarte tatin. I'm sorry I can't link it but it can be found on Google and I think it's absolutely delicious.

I've mentioned this on loads of threads already but if you like a really clean healthy soup simply put the whole tomatoes into a slow cooker no water add a good amount of salt pepper and a pinch of sugar and cook until totally sodt and then liquidise.

This is what I do - roast at a low temperature for a couple of hours with a little oil, seasoning and herbs to partially dry them out, then freeze in layers separated by greaseproof paper. They are truly delicious!
