Using dessert gooseberries?

I have a dessert gooseberry bush that is heaving with fruit. For those who don’t know, these are much sweeter than traditional green gooseberries, more like a grape.

I’ve looked up how to use them, but I don’t know how much to reduce the sugar quantity by, as the usual recipes are for the sour berries I assume.
Any advice?

That is a tricky one. Could you stew a small batch "naked" and then start adding sugar at the end until to your taste? Then you will know that 100g berries need 10g sugar, for example.
Actually I might ask Chat GPT, but I would take the answer with a pinch of salt ;-)

They work well in a crumble or a cobbler. My mum used to add them in with the berries when she made summer pudding, or stir them into rice pudding to give it a bit of flavour.

Maybe use some in jam and do 50/50 as sweet fruit jam at that ratio?

I would use them as any other stone fruit/berry instead of a traditional gooseberry recipe if you're worried about being too sweet.
