Aubergine starter recipe ideas please!

It's our anniversary today, so I would like to make an evening meal consisting of small plates/ tapas style dishes. So far, I have the following ideas:

  • Patata bravas
  • Spanish chickpeas with spinach
  • Padron Peppers
  • Some salad leaves

We are very keen on aubergine, but I don't just want to do aubergine with honey.
If you have any other suggestions then they are most welcome!

slice them long ways in strips and roast. Then fill each strip with feta and basil and roll up. Or slice, roast them and then layer in a dish with a tomato sauce and layer in mozzarella, add garlic and basil to each layer.

Aubergine, Mozzarella and tomato stacks? Slice them all evenly and stack, drizzle witholive oil, add herbs/ spices of choice and bake 20mins or so

Following your spanish theme I'd do Escalivada
Roast the aubergine with a red capsicum , an onion and if wished a tomato
(whole garlic cloves can be added if liked )
Check on them while roasting to remove from the oven when they are cooked as some roast quicker than others
When done let cool until they can be handled to peel , tear into strips the aubergine and the red peppers the onion sliced ( I use one red onion and a white one for contrast ) lay the strips neatly side by side , sprinkle with salt flakes and season with good olive oil , serve at room temperature with crusty bread
It's easy and very yummy

Thank you all. I went with he hassle back aubergine in the end. It was a hit!
