Cooking chorizo recipes please

Does anyone have any recommendations of recipes for cooking chorizo that isn’t pasta sauce, plain tapas or a stew with beans or chicken peas?
Ideally easier and for smaller number of portions as live on my own. I could cook and freeze but just don’t have as much space for it.

I heat it in a fry g pan til the oil seeps out, then remove it and fry onion and veggies in the flavoursome oil. Add rice and stock, cook, then add the chorizo at the end, very tasty.

Fry it until the oil runs out then remove the meat from the pan. Fry a piece of cod or similar white fish in the chorizo oil then serve with the chorizo sprinkled over the fish with whatever veg you fancy.

You can also do what @FizzingAda describes but instead of adding rice and stock, add cubes of bread and fry in the oil with all the veggies.

Also nice to fry cubes of chorizo and mix with cooked lentils, tomato, onion, flat leaf parsley, olive oil and sherry vinegar.

I use it in paella.
I also freeze it in 5-6cm chunks; well-wrapped, it keeps for ages.

I can be a very very lazy cook. Sometimes I cut up cooking chorizo (with strong scissors - quickest way) and put it in a roasting tin with frozen ready-made roast potatoes. Have with any instant veg you like, eg sugar snap peas or cherry tomatoes.

Chop into cubes, roast with chopped waxy potatoes, then eat with a fried egg on top or as a side dish to white fish.

Or fry with onion, then add some spinach with a splash of water to wilt, add some cooked puy/green lentils, season, and serve this as an accompaniment to fish.

Yes risotto with peas. It’s in the taming twins book book. Freezes well too.

Or chorizo frittata/tortilla - or just add to a basic omelette which is quicker!

Btw, I freeze uncooked chorizo and get out however much I need. Defrost it though

Roast in the oven with gnocchi, red pepper, onion and cherry tomatoes and chilli flakes and seasoning until everything is browned. Top with shredded mozzarella for the last 10 mins and then sprinkle with fresh basil.

I do a paella or risotto with cubes of butternut squash, red onion, chunks of chorizo, hot smoky paprika, garlic, lemon zest and either chick peas or green peas. It's lovely.

I make a soup with chopped chorizo, onion, tomatoes, butterbeans, tomato puree, garlic and veg stock serviced with parsley and garlic bread. There's no recipe as such but I fry the onions and chorizo together and use 400g tins of tomato and beans, chorizo and the other ingredients according to taste. Not heatwave friendly though!

We do the chicken and chorizo jambalaya as above and a potato and chorizo omelette.

if you can be arsed to make it we make cocido (very rarely as it takes ages but tastes lush - sisters recipe!)

So many ideas. I knew MN would give a great range. Not much of a cook but think it will be paella. Ages ago I made Delia frying pan one but didn’t use chorizo so think I’ll have a go at that
