I’m just so fed up of cooking at the moment it’s way too hot and then the clean up after I’m so fed up of it!

im looking for really easy quick meal ideas, help Confused

Today I’ve roasted chicken legs (with extras for the week), and made a mixed chopped salad, which will be served with Jersey potatoes, beetroot, coleslaw etc.

Tomorrow with be chicken Caesar Salad.

Last night I put two chicken legs in the oven while I sat in the garden. Then I stripped the meat off and served with a green salad.

Today for lunch I'm having a watermelon, cucumber & mint salad with crumbled feta cheese. 😎

Neither took more than 3 minutes effort.

We are only eating salads, bread, cheese and cold chicken and ham from M&S. It’s just a few weeks so won’t bankrupt us, or leave us malnourished!

Today we have whole seabass in a sauce from Lidl (bake in oven 20 minutes) Mediterranean vegetables (also Lidl, prepared) and rice (microwave) easy peasy. Yesterday I had smoked mackerel potatoes salad - I did cook potatoes but everything else was raw or precooked, we’ve had burgers and chips, oven chips and i basically just split a pack of mince into burgers and season whilst cooking. Steak and Caesar salad is quick and delicious, got some new potatoes to have with pork chops and salad tomorrow

Whisk some eggs, add cream or greek yogurt, add bits and bobs you have like toms, veg, cheese etc. Put in shallow tin, into oven. Cook. Serve with rolls/bread salad, whatever you have.

Is that like a quiche without the pastry? Will it cook the same in a glass-type dish?

Make a big bowl of Tabbouleh and serve with cold meats, flatbread and lettuce.

On Friday after work I just raided M&S for salad bits and bread, placed it all on the kitchen island and said ‘help yourselves, it’s to hot to cook’ and then we’ve had the leftovers over the weekend. I know it’s probably more expensive, but on this occasion it was necessary.

Today we bought a pre-roasted cold chicken and we’ll have salad and new potatoes with that.

Yes it's really called frittata. And yes, provided the glass dish is ovenproof like pyrex it will be fine. Some start it off on the hob, but I don't bother with that. Give it around half an hour at 180 fan, but check it. Leave it to cool and set. Can be eaten warm or stored in the fridge to eat cold later or next day or two.

Have you an air fryer?

Chucking everything in the airfryer meals are easiest, same idea as roasting tray meals but doesn't get the kitchen as hot.

Have a look on Good Food, easy family meals, 5 ingredients or fewer.

Falafel, hummus or tzatziki , salad, wraps
chicken off the hot counter made into a Caesar salad. Add fries
omelettes and salad

We’re having sesame tuna steaks tonight, they take about 6 mins! Will serve with a rice noodle salad and pickled cucumbers with any other salad bits that are in the the fridge. I reckon I can have it on the table in about 10 mins!

This evening I had a 3 egg omelette with salad. Took 5 minutes.

I believe in leaving the cooker to do its thing and getting on with my day.

Most of our meals are <15 minutes of hands-on preparation, then I set off the microwave, the pressure cooker (induction hob with timer) and the oven or air fryer so they’ll all have finished by a certain time. Maybe go back and shake the air fryer basket half way.
I can even trust myself with roasts and cakes. I usually walk in a few seconds before the timer goes off!
Boiling stuff obviously needs watching, especially on a gas hob.

The kids can lay the table and fill the dishwasher afterwards. Maybe take over cooking after a certain age.
I refuse to slave over a hot stove, especially in a heatwave.

I make this in a greased silicone cake “tin”. I add veg, feta and Parmesan. Sometimes herbs. Cooks in 30 minutes. 170 degrees fan.
