Roast potato leftover ideas

Does anyone have suggestions about how to serve leftover roast potatoes so they're palatable?

We make normal roast potatoes and also what my mum called scalloped potatoes - fairly thinly sliced, then roasted.

We often have leftovers which I eat for lunch the following day, but they can be dry and a bit bland. How can I make the leftovers more appetising?

I so rarely have left over roast potatoes that this isn’t something that comes up often for me! And if I do, I stick them in the air fryer for a couple of minutes to make them crispy again, sometimes with a sprinkle of garlic powder or paprika.

The most obvious/traditional way to use up leftover roast potatoes is of course bubble and squeak.

But if you aren’t keen on that and want to use them in a different dish, then have you considered chopping them up and making a Spanish omelette with them, perhaps with chorizo and onion? Or using them in a potato salad so they have “sauce” from the mayo and yoghurt? Both work fine with left over roast potatoes.

put them on top of something, so like a topping for fish pie, cottage pie, chickem pie etc

I like to warm them just for a few seconds in the microwave (sounds rogue but bear with me) it warms them whilst leaving them quite moist (they go quite soggy) so doesn’t dry them out. Then hang them in the air fryer for about 5 mins on 180 to crisp them up and really heat them!

this is also how I would reheat chippy chips!

Freeze them and add them to the next batch part way through cooking.

Half them and add to frying pan with other veggies when making omelette.

Add to casseroles or soups

Snaffled straight from the fridge stood in front of then open door...?

On a serious note I like to use them in a sort of cheats tortilla de patatas - slice them up and fry over till warm and a bit crispy, sometimes with a bit of spring onion if I fancy. Mix in a bowl with a couple of eggs and season to taste. Fry gently, shuggling about for the first minute or so, then let to set. Flip over, fry for a couple more minutes and eat either hot, warm or cold!

Air fryer for a few minutes then squash and add to an omelette. Or if you have a lot, add some smoked paprika, air fry then add to mayo with mustard, salt, pepper, thinly sliced onion for a potato salad

Mash them up with spring onion, sweetcorn and tuna, shape into fish cakes and heat through in the microwave and serve with salad. Or make gnocchi

This chaat is so fresh and tasty, and there’s ample sauce so it never feels dry if that’s your concern. It feels like a totally different meal to a roast.

They make a lovely potato salad , especially if you do a German mustard dressing

Just chop the left over roasties up chunky and warm in a frying pan before adding the dressing

Flavour with a spice..chimichurr or paparika
Reheat in airfryer then sprinkle with grated cheese melt for a few mins.

I second this as it's exactly what I do except that I like it sliced thickly on a baguette

Cut them up and fry them with chopped bacon & onions. Finish with a dollop tzatziki. 😋

This looks great - thanks for posting it. I have all the ingredients in the house at the moment so I am going to roast potatoes specifically to make this dish!

I’d make a bravas sauce (easy recipes online) and have them with that, or chop them and use in a Spanish omelette. There’s a theme emerging here 😂 I love Spanish food.

If you have an air fryer, they crisp up lovely on reheat

I also slice them and fry them in the pan and serve with eggs and beans - a real council estate tea which is lush

Turning into bubble and squeak is another favourite here

Im with your child, I find potatoes to be a sensory thing, rarely can I eat mash and Im as fussy as fuck with roasties and chips

If I feel a bit of bite, or a bit of grease - Im not eating them
