Cauliflower & butternut squash. What are you cooking?

My oddbox has left me with these...I feel like I'm just defaulting to soup...I am not opposed to soup and I love soup and could happily eat it daily.

But given the extremely high temperatures this week (I'm in Cambridgeshire) I thought I'd reach out to the hive mind for some ideas!

I can easily shop for additional ingredients etc but am just feeling very uninspired.

normally I would suggest a curry with some lentils added. But not with this weather!

Butternut squash? I'd make a quiche. Bns and sage.

Or marry me chickpeas with butternut squash, pan fry gnocchi and combine. Or just cook orzo in it!

Cauliflower. I'd roast in the airfryer with a gojuchang marinade. Add to a Buddha bowl or just eat hot with a soy/gingery dipping sauce.

I just had a salad with roasted cauliflower. Blanched the florets, added a tin of chickpeas and red onion wedges, tossed with cumin, turmeric, ground coriander, garlic and salt. Sprayed with oil and popped in the air fryer.

M&S do a lovely squash and lentil salad with goats cheese. I’d love to know how to replicate it.

If the cauliflower is really fresh, raw cauliflower is lovely as a crudite with dips.

Or roasted cauliflower is delicious.

Thanks all, some fabulous ideas! I think roasting and adding to a salad is the way to go this week. Although I will definitely be trying the Chinese cauliflower recipe. Risotto sounds lovely too but don't think I could face cooking it in this heat!

Chorizo makes pretty much everything better and with butternut squash (and feta...still beating that drum) it'd be lush!
