Ideas for a summery Sunday lunch for visiting parents

My parents are coming for lunch on Sunday and I need some inspiration for what to cook. I’ve done a bbq and Mexican but fancy a change. It’s going to be about 28C where we are so I’m thinking something summery… any ideas much appreciated! Thanks all.

Prawn saganaki.

Get some whole prawns, clean and marinade in something simple like herbs and lemon and them bbq them.

In a pan, make a tomato sauce from scratch. Good tomatoes, garlic, onions, ouzo if you have it.

Get some good bread.

Make a salad.

Serve with feta (you can put it on top of the sauce and in the oven, or grill the feta)

If the kids aren't into the prawns, they can have the sauce, salad, bread and cheese.

It's a sharing dish so very much serve in the pan

Spatchcocked chicken with garlic/lemon/thyme and a Greek salad. Crusty bread for juice mopping purposes.

It is boiling hot where I live at the moment and for dinner last night I made:

salmon - roasted in the oven in a little white wine and left to get cold
Green salad
Tomato salad
Herby potato salad
French bread
Trio of sauces - blue cheese, spicy adobe, and creamy herb.

It was really light but tasty and the colours on the plate were lovely. Plus I made everything ahead of time.

For your lunch I would add a corn elote as well - corn (could use frozen), red peppers, onions, and parmesan or cotijo cheese.

Sea bass (from the fish van), baked with lemon and olive oil ; potato dauphonois (homemade and not excellent...dry and not enough garlic) peas. 6/10
