Watermelon,cucumber and feta salad

I really fancied this having seen it suggested on here .
I used this recipe.

It turned into a horrible watery mess
Was it the salt in the recipe ?

If you’re looking for an alternative, I like Nigella’s recipe (NB no cucumber).

I made it yesterday and it was amazing. Watermelon, feta, red onion, mint , lemon juice, olive oil. Fab!

I’d leave the salt out till you are actually eating it!

Also, coriander is nice with a few finely diced peppers for more of a salsa salad feel.

Agree if has to be made just before serving. I often do a version of his salad - watermelon, mint, feta, red onion, olive oil - that’s it. Leave your watermelon to leak its moisture a bit and strain. Salt isn’t necessary and will leech a lot of water out of it.

I wouldn't add salt if you're using feta. I make a similar salad; watermelon, feta, mint and a splash of lemon juice. I've never found it to be particularly watery and find it keeps ok for a couple of days.

I'm from a watermelon salad eating culture - this is not a good recipe at all. That's not how you make watermelon salad, lol.

I tend to chop my water melon and leave it in a sieve to drain for an hour before combining with the other ingredients.

Sure! It's basically just watermelon, feta, chopped mint, lemon juice and a drizzle of extra virgin olive oil.

I would replace the cucumber with lettuce.

Lettuce, watermelon and feta then add fresh home made pasta!

I'd leave out the cucumber. Black olives are nice with it. I'd like tips how to keep the feta in clean cubes tho, mine goes crumbly and then looks a mess with the watermelon

I was playing around the other day and DS and I made this on cocktail sticks a la pineapple and cheese cubes style. Cubes of watermelon and feta and a bit of mint leaf in between. More faff than just piling it up on a plate but it looked pretty.

Dr Imar Khan makes this.. but with pomegranate seeds on too.. you make and eat it straight away.. no salt.. feta is salty enough. I love it.

The cucumber in the picture is deseeded, did you deseed?

Agree that you can’t make ahead or the salt (or salt in the feta) will make the water leach out of everything

Tbh I think the cucumber and avocado are not good additions.

@minipie yes , with hindsight avocado and cucumber = a bit much !
Yes ,I did de seed the cucumber.
Like the sound of watercress .
