Hi I’m trying to be more healthy and want to freeze a tasty homemade pasta sauce . Does anyone have a recipe they makr that they freeze ?

As above - whatever you’ve got in the fridge plus plenty of onions and garlic along with tinned tomatoes or passatta. You get a lot of flavour from properly frying the onions/carrot/celery off first, let it caramelise then I add mixed peppers, courgette, aubergine, mushrooms or anything else I’ve got in the fridge. Add enough tinned tomatoes (use good quality polpa) to cover plus couple of crumbled veg oxo and some Worcester sauce and then simmer on low for an hour. You could add butterbeans or something similar if you want extra protein. I also add a teaspoon of chilli flakes. Whiz up in blender.

Caramelise onions, add garlic, blitz it up with a big jar of roasted red peppers (could roast your own if you can be arsed but that prolongs a quick recipe and also even thinking about the oven right now is 🤢)

Back on the hob and simmer with a heavy handed dose of Parmesan and cream.

It’s suuuuper fresh and light for these warm evenings!

Roast red peppers, garlic, red onion, aubergine, dried herbs that you like.
Put in a blender with silken tofu, tomato puree. Ready to use. Just use milk, water or cream if you want the sauce a bit thinner salt to taste

Or, family favourite, chop a block of tofu, put in a blender with almonds, plenty of basil 120g olive oil 10g nutritional yeast OR 30g of parmigiano Reggianio. Blend and use. Salt to taste.
