What are your go to simple summer meals that don’t need loads of store cupboard ingredients?

Going to be away from home and will have a supermarket but don’t want to buy loads of ingredients like spices etc. Taking a couple of already cooked meals out of the freezer for a couple of nights.

Tortilla quiche (literally press three or four (depending on the size of your pan) overlapping in the bottom of the pan, use whisked eggs, little bit of cream and then whatever flavours you’d like in quiche and bake) along with salad.

Also for this weather I’m eating a lot of watermelon, cubed feta and fresh mint salad. Easily prepped, beautifully refreshing and really hits the spot.

Also packets of flavoured rice, tossed up in a bit of oil, mix with tuna, olives, peas etc or tin of sweetcorn if you dont want to mess with frozen peas

I’d love that and I often make similar things regularly for my lunch, but DH would want a main course after that sort of thing.

4 ingredient watermelon salad:
Watermelon cubed, green beans chopped to similar size, grilled halloumi chopped and toasted pinenuts. Delicious and simple 😋

I usually put a few key herbs and spices in a tiny pot and take them with me. Saves buying loads or taking the whole pantry.
E.g. a bolognase one and a tex mex style one.

Quick meals:

gazpacho and garlic bread.

Grilled/fried meat/fish/chicken with new potatoes and a salad. I always take a bottle of olive oil and a couple of lemons to make dressings (or a small bottle of balsamic vinegar).

Or simple pasta dishes using things like bacon/chorizo/chicken with veggies of chioce and then tomato or cream. Again, lemon often works as a good flavouring here and I'd usually take a clove of garlic too.
