I would love to make some Lebanese lamb kofta this weekend - I’ve tried so many different recipes but can’t seem to get it right (how they do it in the Lebanese restaurants!) any insider tips would be greatly received- thank you!

I think it's in the spicing really, I'd use cinnamon, cumin, coriander powder, maybe some paprika in the lamb mix, with a little finely chopped onion and garlic and a tbs of olive oil to keep it moist. Let it rest in the fridge on skewers. Then oven bake on for 18 mins, turning half way through, hut you could grill. Do a lemon, garlic yoghurt dip with it. I think it's the cinnamon that makes it feel middle Eastern.

You could try a bit of cayenne pepper too, depending on how spicy you want it. But I do think it's the cinnamon that makes it. I just do kofte by eye and what i have in, and they always seem good to me!

Homemade Greek yoghurt flatbreads, too, they're really easy. Just yoghurt, self raising flour and a pinch of salt.

I tend to make a big lemony garlicky baby spinach salad with some red onion in, grill some halloumi, then everyone can assemble their own kebabs of choice.

Might do it this weekend while the weather holds!
