Stanley Tucci is doing a series around Great Britain. What local dishes do you think he should try?

I’m from Norfolk, so I’d love to see some Cromer crab get a mention, although I’m realistic enough to accept he’ll probably go to Cornwall instead!

What would you put forward from your area?

Sussex pond pudding is a classic, as long as it's the traditional recipe with the whole lemon.

I pre-cut the lemon lengthwise into four or six pieces, then stick it back together with some of the butter/brown sugar mix, before putting it vertically into the suet pastry-lined pudding basin, lid on top.
It makes it easier to serve - cutting up a whole lemon at the table can be tricky.
A wonderful winter dessert but not for the faint hearted.
( I have seen the whole lemon — basically the whole point of the dish — actually omitted in favour of a small amount of lemon juice. Tragic. )

I grew up abroad but have lived in London and SE England for 25yrs. I've never heard of some of some of these things! I think James Martin showed the Sussex pond pudding on his show once so I must give it a try. I'd love to see any other recipe inspirations posted.
