June 18?

Roast lamb with cumin and fresh mint

shoulder of lamb - 1.5 to 1.75 kg
4 cloves garlic
3 lg pinces cumin seeds
mint leaves - a large handful plus more for gravy
juice of two lemons
enough olice oil to make a slush
glass or two of white wine or stock for gravy

3 or 4 deep cuts in lamb through to meat. Put in roasting tin.

Peel garlic and put in food processor wiht cumin seeds, a at handful of mint and the lemon juice. Add a grinding of salt and some black pepper. Blitzt to coarse paste adding enought olive oil to make it into a spreadable slush.

Massage meat well with paste spreading over the skin and into the cuts. Put in cool place (not fridge) for an hour, basint occasionally with any paste that has run off.

Preheat oven to 200 degrees of Gas 6. Roast meat for 45 ins to an hour. Remove from oven 10 mins before carving.

Gravy"

Remove meatn from roasting tin, put tin on moderate heat and pour in couple of glasses wine or stock. bring to boil and stir with wooden spoon. add the mint and poss salt and pepper. Keep warm while you carve.

Sounds yummy! Must try. Excuse typos!
