Anyone got a good recipe for carbonara sauce?

I fry chopped up mushrooms and bacon (or sometimes I use pepper coated salami) in a pan and then just add cream and grated white cheddar cheese having turned the heat right down, stirring until it's all melted into a yummy sauce.

It's excellent with the salami which has a pepper coating round the edge as you don't need to add any extra pepper.

thats sounds yummy but its not carbonara. Carbonara is simply pancetta fried in a bit of olive oil and mixed with cooked pasta, a bit of cream and a couple of gently beaten eggs. Season, top with parmesan and serve

Cook pasta (spaghetti is best), fry a little chopped bacon or pancetta. Beat eggs (1 per person) with a little creme fraiche, salt + prepper and grated parmesan or pecorino (optional), drain pasta, pour in egg mixture, stir through, add bacon, stir through again until the egg is cooked through. Serve with extra shavings of parmesan on top and freshly ground black pepper.

Nigella Lawson's version is also yummy - fry diced bacon or pancetta in oil until almost crisp then add a glass of white wine and let it bubble til almost gone.
Mix grated parmesan and egg in a bowl, then add the bacon and wine mixture to the cooked pasta then remove from the heat and stir through the egg and cheese. Before serving, stir though a knob of butter (cos it's not lardy enough already!)

Oh I know it's not a real carbonara sauce, but its a very quick meal to make given that the spaghetti cooks whilst you make the sauce and I've never been keen on real pancetta.
