Risotto - this is the only one my dc will happily eat https://www.hellofresh.co.uk/recipes/super-cheesy-oven-baked-tomato-risotto-6200da080ccbaa3a7322fe42
Enchiladas
Quiche - Jamie Oliver does a good recipe for ‘speedy quiche traybake’ which we loved until my dd went through a phase of rejecting anything green!
Noodles - this has always been a winner https://www.myfussyeater.com/sesame-honey-chicken-noodles/

Classic combinations of protein, carb, veg/salad.

So tonight we’re having a roast chicken with baguette and butter, asparagus and salad. Only one of 2 of my dc will touch the asparagus, but they’ll eat everything else. We’ll have the chicken again tomorrow in Caesar salad with garlic bread.

Or salmon (or other fish), rice/noodles, broccoli, sometimes with a cucumber salad.

I also do lots of build your own fajitas, tacos, flatbread, pita with chicken, beef, lamb and lots of toppings. So something for everyone and very flexible. The one who will eat lots of meat will eat meat and wrap/flatbread/taco and the one who mostly likes salad and cheese or hummus can have that in a flatbread/wrap. And every option has lots of veg available.
