Summer meal ideas

I am terrible at meal planning in the summer. I’m great in the winter but the change always fools me.
i don’t like small dinners, I never eat much during the day so dinner is important to me but the things I eat in the winter don’t suit - soup, stews, mash etc.
Hit me with your non- salad ideas….

Tray bakes - pile of Mediterranean veg with chicken thighs or salmon and some kind of seasoning (I use harissa a lot)

We love this piri piri chicken traybake. It's super easy.

Or I'll roast a tray of Mediterranean veg and have with a naan/pitta and harissa Chicken.

Pork Chops, bbq'd corn on the cob, salad and new potatoes.

Summer chilli with butterbeans, new potatoes and green beans and pork mince rather than beef and kidney beans.

Grilled chicken breast cous cous/bulgar wheat (cous cous is easier) and a Greek salad.

Hefty salads, generally not leaf based. For example I like:
Chickpeas, crunchy veg, avocado and feta
Waldorf salad with added cooked chicken Asian slaw with nuts, add stir fry prawns or chicken
Cowboy caviar
Tabbouleh with some chicken or salmon

Greek pork or chicken - cube and marinate the meat, cook in pan or under grill. Eat with pitta or wraps, tzatziki and a tomato/cucumber/red onion salad.

Sausages, potato salad and coleslaw

Steak or duck breast, fry slice up and put on a salad. Extras in the salad could be cold new potatoes (or saute), avocado, apple or pear, radishes, spring onion, nuts

Never tried a pilaf, anyone got a good recipe??

In very, very hot weather, I try not to turn on my oven at all as it heats up the whole kitchen and the room above it. Even standing over a stove can be too hot for me. So on those days we do eat a lot of salads (sorry - i know you said no salads) but also a little tea of sandwiches, fruit, scones, cream and jam, pitta breads, carrot sticks and hummus, cheese and biscuits with fruit and / or salad.

On not so hot days, I am a big fan of using my slow cooker in summer. Minimal time in front of a stove or oven but a proper meal at dinner time. The week after next I am planning to do a curry, sweet and sour and a stew in my slow cooker.

I came back to look at this due to the forecast. Thinking of letting DH sort himself and I will just have salad (he’s diabetic and needs carbs) as the idea of being in the kitchen is horrific.
