Food for hot weather

Seeing as we are in for some nice weather I wondered what everyone is planning for dinners. I've decided to do salad niciose tomorrow and home made burgers at some point next week. Not sure what else yet

I do a warm salad of new potatoes, baby spinach, halloumi and bacon bits. With a garlicky lemon olive oil dressing. Baguette to accompany.

Definitely burgers, DP's pork, haggis and black pudding ones will be making an appearance, with cheese, of course.

I still can't quite believe it's going to be nice on a bank holiday weekend so haven't done the shopping yet...

We have a lot of nights when half of us are away doing something this next week( either I’m gone with a dc or Dh and dc are away), but the other nights we’re doing:

Nando’s chicken thighs on the BBQ, macaroni salad, green salad and watermelon slices

Hoisin pork belly, prawn skewers on BBQ, rice and some Asian style salads

Those are our two BBQ dinners.

Then doing 2 nights of pulled chicken soft tacos, so only have to make the chicken once, then just lots of salad and toppings for them.

Planning to do some mezze type meals (posh 'picky bits'!). Hummus, tzatziki, carrot sticks, pitta bread, Greek salad, stuffed vine leaves, spanakopita. Also doing pizza and salad, as the pizza cooks quickly so the oven won't be on for long! May try making a tart of some kind with salad and new potatoes, but that might be too much cooking in the heat..

Cold roast meats with apple/mint/citrus sauces
Every kind of green salad
Grilled fruit with balsamic vinegar and goat's cheese

It will be pick your own what's that tea for one after busy day.that might be cereal,eggs,beans on toast.

I’ve made a Mediterranean chicken tray bake with some crusty bread and salad.
Low effort - I chucked it in the oven 30 minutes ago and it will be ready to serve in 10.

I’ve just made butterflied chicken breast with loads of garlic and herbs, crispy Parma ham, salad and homemade coleslaw.
lunch was a feta, watermelon and mint salad.

BBQ today
Chicken salad tomorrow (jersey royals and all the trimmings)
Rest of the week I'm having picky bits- bread, olives, cold meats, brie, cucumber, houmous, coleslaw etc. Can't face having the oven/pans on right now

Lots of watermelon and ice cream

All sound perfect. We had nice ham with salad last night. Tonight is home-made burgers and air fryer skin on chips. I'll add smoked paprika and maybe garlic salt

Watermelon and feta salad with mint.
Asparagus with new potatoes and green sauce (made with herbs from the garden).
Home cured or lightly poached salmon with dill and cucumber salad.
Room temperature Spanish omlette using any leftover vegetables with a green salad.
Egg mayonnaise with tomato and spring onion salad.
I usually make the salad dressing and mayonnaise once a week and keep in the fridge.

Didn't we have a thread about hot weather soup a week or so ago?

Anyway chilled soup.

1 courgette per person
oil
fresh coriander or frozen crumpled up
boiling water
stock cube
optional spoon of crème fraiche, yoghurt or soured cream

Slice the courgette(s)
heat the oil in a pan, add the courgettes and sweat until they are golden colour
Add the coriander, water and stock cube
Simmer for 15 mins and blitz with a stick blender
Turn it off so it can cool to room temperature then chill for a couple of hours dd a dollop of the crème fraiche if you want.

It can also be served hot

Cheat's baba ghanoush

Stick an aubergine in the oven or air fryer.

Heat until it 'collapses'.
Put in a colander over a dish and stab with a knife all over, leave for any juices to drain.
Once cold cut in two lengthways and put the flesh in a bowl, add mayonnaise and stir until it is a consistency you like.

You can also add cumin, olive oil, garlic and tahini.

I made coronation chicken with salad and crusty bread the other night and it went down a treat with the whole family in the hot weather.

Other favourites are…
Greek salad
Lamb koftas (Jamie Oliver has a great recipe using pistachios 😋) or falafels with flatbread, salad and tzatziki
BBQ pulled pork baps with coleslaw and sweet chilli sauce
Smoked salmon and potato salad with horseradish (this might be a Jamie Oliver recipe too)
Salmon tikka with naan bread (Jamie Oliver again 😆)

And as others have said quiche and salad, burgers etc.
